Quick Lemon Pepper Seasoning

Lemon pepper seasoning is one of my absolute favourite seasoning! It goes great with salads, cheese toasts, pastas and many other Italian recipes. It is absolutely easy to make and just because I can't lay hands on them anywhere in Kolkata, does that mean I have to live without it? No way. So brainstorming to the rescue. If I have to make it on my own, I have to make it my own. I have been meaning to put this up for a long time but laziness got the better of me every single time. However, this time since I already used it in my Sheekh Kebab Salad recipe, I kind of felt embarrassed not doing it. So here you go, enjoy ;)

As you can see, my crushing of the zest wasn't perfect this time :(



Ingredients

For approx. 1 cup

  • Lemons – 5/6 (depending on the size, see tip)
  • Whole black pepper – ½ cup
  • Whole coriander seeds – 2/3 tablespoon (optional, see tip)
  • Salt – ¼ cup
Method
  1. Zest all the lemons. Don't get lazy, grate away! Make sure you don't get the whites in your zest.
  2. Bake them on the lowest power setting until they are dry. You can also sun dry them (tastes even better) but it is going to take a long time (remember what Grandmas did with achar).
  3. Crush them into coarse sized grains.
  4. Crush the black peppers into coarse grains as well.
  5. Crush the coriander seeds coarsely (if you are using them).
  6. Mix everything into the salt and blend well.
Tip
  1. Increase the number of lemons to make the seasoning more tangy.
  2. Use limes instead of lemons to make lime pepper seasoning.
  3. Using coriander seeds gives a further fresh, lemony flavour as well.
  4. This can be stored for 3-4 months in an airtight container.

    1. Hey, thank you for dropping by! I am actually an engr, my co-blogger and friend Debasmita is the microbiologist (the one who did the Roshogolla post among many others). And yeah I got them all now, I was just missing 1 line of code :d Took me 3 hours to sort it! :o And you're absolutely right about not finding these things here, but I am trying my best to prepare them at home (and eventually post them for everyone's benefit lol) :angel
